Cheap Lunch Ideas

Since university is starting in a month I thought it would only be right to share the recipes I will be swearing by during term time. In this week's post I will share with you 6 links to recipes while providing you with only the necessary ingredients that will provide you with all the goods; protein, fats, carbohydrates and vitamins while still living on a student budget. All these recipes contain similar ingredients while still being different  meals which means that you can still stick to your weekly food budget will stay intact while still providing with healthy and easy meals. 

Caesar Salad

As the chicken is cooking chop up the lettuce and slice avocado. Once the chicken is cooked and cut into bitesize pieces, mix up all the ingredients into a bowl with the dressing and sprinkle some parmesan as the final touch.

Avocado Toast

Toast two slices of bread. Cut the avocado and smash directly on to the toast. Fry an egg or microwave some baked beans for some protein. Sprinkle some salt and pepper for some flavour.

Emily's Salmon Bowl

While the salmon is cooking, microwave some rice in a bowl. Cut some cucumber and avocado into small pieces. Either place the cooked salmon on top or smash into the rice and mix it up with some spicy mayo and soya sauce. Sprinkle with any additional toppings such as spring onion or sesame seeds.

Breakfast Tacos

Scramble two eggs and cook in a pan. Toast as many tortillas as you want and add the sliced tomato, avocado and bacon onto them. Split the scrambled egg on to each tortilla and top with cheese and chilli flakes.

In a bowl add the tinned tuna and mayonnaise and mix together while the bread is toasting. Slice some avocado and tomato. On one side spread some pesto and top with the avocado and tomato and add the tuna mayo to the other then place together and your sandwich is ready to eat!

Pesto Pasta Salad

While the pasta is cooking, slice the tomato (and cook the chicken/ tuna/ sausage). Once the pasta is cooked and drained add the pasta back to the pot and place the tomatoes and pesto (and the protein) to stir together. Add to a bowl and top with cheese.
