Holiday Baking!
In this week's post, I wanted to share with you the new recipe I have come across called- Kinder Cookie Bar. I first came across the recipe on the Gemma Louise Miles channel and took some inspiration to do some baking. These are the perfect treat to bake, they can be made any time of the year but to make them more Christmassy add some decorations (maybe some Christmas sprinkles?).
This version is slightly different to Gemmas' recipe as I had to fit it around my gluten-free diet. Although they are gluten-free they are delicious, you can also change some of the ingredients around to fit any requirements you need.
- 280g Gluten-free flour
- 1 tsp Bicarbonate of soda
- 1/2 tsp Salt
- 1 tbsp Cornflour
- 130g Unsalted butter
- 50g Granulated sugar
- 150g Light brown sugar
- 1 Egg
- 1 tsp Vanilla extract
- 250g Kinder Chocolate
1. First, preheat your oven to 180C and grease and line with baking paper in a baking tin.
2. Melt butter and add to a mixing bowl with both sugars, then mix until combined.
3. Once mixed, add the egg and vanilla extract and continue mixing.
4. Then add in your flour, bicarbonate of soda, salt, cornflour and mix until becomes a soft dough.
5. Chop up all the Kinder chocolate (leave some larger chunks) and add to the dough.
6. After, place cookie dough into the time and spread evenly across the surface. Add the remaining chunks to the top of the cookie.
7. Place in the preheated oven for 20- 22 minutes (or until the skewer comes out clean). If you want very soft cookie dough, take it out slightly earlier.
8. Leave to cool down for 20 minutes and then pour yourself a glass of milk, and enjoy!
