Gluten Free Carrot Cake Recipe
Do you have some left over carrots you don't know what to do with? Don't throw them away! Make this amazing gluten free carrot cake! This is the perfect cake for anyone who wants to cuddled up on the sofa watching tv, eating a homemade treat!
Ingredients;
320g gluten free flour
1 1/4 tsp baking powder
1 tsp bicarbonate of soda
1 1/2 tsp cinnamon
1 tsp ginger
Pinch of salt
3 eggs
265g of dark muscovado sugar
300g sunflower oil
300g carrots (grated)
100g of nuts (I used walnuts and almonds)
200g raisins or sultanas
Instructions;
1. Grease and line a large baking tray and pre heat the oven to 180C
1. Mix in all the dry ingredients together in a large bowl (apart from the nuts and raisins)
2. In another bowl whisk the eggs and sugar for 2 minutes and then add the oil and mix for another minute
3. Stir in the wet ingredients into the dry, slowly, and then add the carrots, nuts and raisins
4. Pour into the baking tray and place into the oven for 40 mins (If the cake is starting to burn put tin foil over the top so it can still bake)
5. Allow to cool and then add frosting, I used Betty Crocker Cream cheese frosting, but you can make your own!
