Vegan Turmeric Cauliflower Curry

One of my all-time favourite meals to have is this vegan turmeric cauliflower curry. It's so easy to make, very affordable to make and is packed with nutrients. I'm not a vegan, however, this meal is so delicious and it's packed with veg, which is a lot better than meat. Last week I made this meal for my family, however, it's perfect to make and freeze for another night if you have a busy life. 

Ingredients; (double for 4 people)

2 tbsp of vegetable oil 1 tsp Cumin Seeds 1 tsp minced Garlic 2 tsp grated fresh Ginger 1 Onion 3/4 tsp Turmeric Powder 3 tbsp of Curry Powder 
1 tsp Red Chilli Flakes 1 tsp Salt 1 Cauliflower 1 1/2 cups cooked Chickpeas 3/4 cup Water 1 can Coconut Milk 1 Cup of Spinach Serve with Jasmine or White Rice, topping fresh Coriander/ Parsley


1. Use a big pan with olive oil, when hot add cumin seeds when their toasted add the diced onion, the ginger and garlic.

2. When the onion is golden add 1 tbsp of curry powder, cut cauliflower, the chickpeas and the 2 extra tbsp of curry powder on top. Then add the turmeric, the salt and some chilli flakes powder (if you like it spicy)

3. Mix everything together and add the coconut milk, spinach and water. 

4. Let it cook for 20 minutes until the cauliflower is soft. Then it's ready to be served!
