Erewhon White Bean Kale Salad
Base;
- Kale de-stemmed and chopped
- Can of white beans
- Avocado cut into chunks
- Pumpkin seeds
Dressing;
- Juice of 1 lemon
- 3 tbsp tahini
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tbsp maple syrup
- 3-4 tbsp water to thin
In a small bowl, whisk together the dressing ingredients until smooth
In a large serving bowl, massage kale with dressing, and then add beans, avocado chunks and pumpkin seeds
